Their Imli Sour, which is a drink inspired from Tamarind Panna, uses tamarind seeds instead of wasting them, which are then roasted and infused into syrup. For their Aam-E-Moji, the mango peels and pits are boiled for syrup or shrub, and then the mango skin is candied to use as an edible garnish. Their Sherbet Khaas cocktail, which is inspired by a Kokum Sherbet, also rehydrates kokum peels to be used in the drink. Curated by mixologist Ms. Payel Paul, the first drink is Melocotón—a vibrant vodka cocktail. The cocktail is then garnished with a house-made lollipop that’s made from repurposed ingredients. The next drink is Palomita—a refreshing take on Paloma. In this drink, the whole grapefruit is used to make sure no part of the fruit goes to waste.

Mumbai’s Sixteen33 is keenly focused on sustainability by crafting their signature cocktail reusing every ingredient across the entire beverage menu. The Bubble Cocktail using grapefruit cordial, where the pulp is juiced for the cocktail, zesting for bitterness, and dehydrating the peel to make grapefruit salt for the Paloma. On Earth Day, they want to bring the special Negroni Menu with efficient division of orange peels between the bar and kitchen. They will use orange peels in the cocktail while chefs incorporate the fruit into the avocado salad. This piquant drink, originally inspired by the Chimbai village, Mumbai, mixes vodka, sea salt, watermelon, oyster sauce, and dry shrimp to make a real flavor of the coast. However, the dried shrimp procured from the Koli fisherman and the leftover watermelon are dehydrated and used as a garnish. They are offering local mixtures in their cocktail flavoring of watermelon that pay tribute to Bandra’s six famous villages.

They just make their customer get every sip to sustainability. With this thoughtful initiative, guests are invited by Monkey Bar to drink with intention. Cocktails are crafted with signature flair. Every sip from the Earth Menu becomes a toast to sustainability, served with Monkey Bar spirit and style. The new menu was made to celebrate the reuse of waste products.

Monkey Bar’s Earth Menu reimagines mixology with sustainability at its core. Planet B features a tart gin-based cocktail with strawberry leather made from reused fruit and a custom sour blend to reduce citrus waste, while Trash Me Not infuses tequila with Panch Phoron brine and finishes with a spice salt rim crafted from dehydrated leftovers. The Plum of All Parts utilises every part of the plum—flesh, pulp, and seed—for a multi-layered tequila mix.
