In a heartwarming tribute to Indian cuisine, Dutch chef and content creator Wolf Alexander Lodewijk has impressed the internet with his take on the most loved Punjabi delicacy, Dal Makhani. He recently posted an Instagram reel of preparing the dish in his signature playful style that has gone viral. He is getting a lot of praise for both creativity and respect toward Indian culinary traditions.

The video opens with Lodewijk saying, “I like some base music, I’m making Dal Makhani,” before diving into the recipe with an upbeat soundtrack.
He begins by pouring pre-soaked black lentils (urad dal) and red kidney beans (rajma) into a bowl, followed by ample water, diced tomatoes, and a pepper-infused seasoning blend. The chef then lets the mixture simmer until the lentils are tender and nearly mashed, all while dancing along to the background music.
Moving to the next stage, Lodewijk chops onions and heats ghee with oil in a large kadhai. He follows with traditional Indian aromatics – garlic cloves, cumin seeds, bay leaf, and both black and green cardamom pods. A garlic paste is then added to the sautéed onions, followed by crushed black and white pepper, turmeric, a creamy element, likely milk or yogurt, and a rich tomato purée.
In true Indian culinary style, he combines the mixture with the slow-cooked lentils and continues simmering until the dal thickens and the oil rises to the top, indicating that it’s ready. For the final touch, he adds in a generous slab of butter and a swirl of fresh cream, adding to the dish’s signature velvety texture. Garnished with chopped coriander and a final dollop of cream, the dish is ready to be served.
