Who doesn’t crave a hot bowl of slurpy spicy instant noodles on a rainy day in. But the guilt of the calories is quick creep in before you open the seal on that yellow packet calling at you from the pantry. Actors, Alia Bhatt and Deepika Padukone‘s chef revealed the power of ‘intentional food’ in a Hollywood Reporter India report.
Breaking down the basic recipe of ramen, Chef Harsh shared that he had been honing his ramen skills for more than a decade. He said, “I have made this chicken and pork ramen for Alia Bhatt and Deepika Padukone. Alia told me it transported her to her travels. That’s the power of intentional food.”
Deepika’s ‘Miracle Noodles’
For Deepika, he served up two styles of broth — the rich, creamy Tori Paitan and the light, clear Shio Tare. She could choose between classic alkaline noodles or Shirataki noodles, made from konjac and famously nicknamed “Miracle Noodles” for being almost calorie-free. She went for an ultra-hot, extra-spicy version with the Miracle Noodles, loved every bite, and even went back for a second helping.
Alia’s ‘intentional’ ramen
Explaining the recipe, the chef revealed a trick that made the instant noodles a little more diet. Apart from adding protein sources, soy, miso broth, and other toppings, he switched up the seasoning process of the recipe. Instead of seasoning the broth directly, he used tare.
What is intentional food?
Intentional food is an experience where you are being mindful about the food you’re consuming and the food choices. It is a practice of eating with awareness, exploring the “how” and “why” you eat food. It focuses on listening to your body’s hunger cues, satiety and ensuring a nutrient-rich and balanced diet. Not only can it improve digestion but also improve your relationship with food, as compared to mindless munching throughout the day.
Chef Harsh also opened up about cricketer Virat Kohli and his wife and Bollywood star Anushka Sharma. For their anniversary in 2019, he crafted the traditional Vietnamese dish pho with a vegan twist by adding rice noodles in the gluten-free version of the dish.
