You would be deceived to think the red lychee-like globules hanging on a bonsai set amongst white stones is a centrepiece for the table. Only, it is a bao with shrimp and mozzarella studded with red rice crackers that mimic the skin of a lychee fruit.
Signature Plates and Dim Sum Creations
At Madam Chow, Oberoi Hotels’ newest restaurant launch at its Gurugram property, the presentations are pure drama, but the flavours subtle and sophisticated. Bringing the gastronomic traditions of Guangdong and Sichuan provinces of China to India, Madam Chow’s menu is rooted in authenticity yet elevated for the modern palate. Signature dishes by chef Wong Kwai Wah include Imperial roasted chicken with fried onion and Mala sauce; Xiang La tofu, the chef’s take on a Sichuanese classic; and Zhenglong whole silver pomfret steamed in bamboo, with garlic, lemon, young turmeric, nonya sauce. An array of dim sums balance artistry and tradition, like the Lychee Bonsai Bao that encases shrimp, mozzarella and bubu arare; Sheng Jian bao with a sesame crust, pan seared and filled with pork and caramelised onion; Harmony Siu Mai with chicken, prawn, green onions in a wheat wrapper; and Ocean silk Cheong Fun with prawn, garlic chives and baby bok choy.
Cocktails, Desserts and Dramatic Ambience
Signature cocktails like Madam’s Favourite, Pearl of Fire, and Jade Hue inspired by Asian ingredients, an extensive selection of Chinese teas and sakes are perfect accompaniments, while inventive desserts such as jasmine tea mai lai go, a Cantonese sponge cake with carnation milk and dehydrated rice crisps; slow-baked Chinese red date pudding with caramelised ginger ice cream, roasted walnut, toffee sauce; and Sichuan peppercorn ice cream offer a sweet note. The space Madam Chow encompasses is dramatic no less. In an all-glass enclosure overlooking a blue reflective pool, it can be bright and open and a moody intimate space depending on the time of the day.
