Avartana at ITC Maurya: A Culinary Journey Through South India's Finest

When I first heard that Avartana had made it onto Asia’s 50 Best Restaurants for 2024, I knew I had to experience it firsthand. The idea of indulging in innovative southern Indian cuisine at such a prestigious venue was tantalizing, even though its original location in Chennai seemed far out of reach. Imagine my delight when I discovered that Avartana had opened its doors at ITC Maurya in Delhi, bringing its renowned culinary magic closer to home.

ITC Maurya, already home to legendary dining experiences like Bukhara and Dum Pukht, now boasts Avartana under its roof. This convergence of culinary excellence instantly elevated the hotel to a must-visit for food enthusiasts like myself. The promise of Avartana’s inventive take on traditional South Indian flavours alongside the legendary northwest frontier cuisine of Bukhara and the delicate Awadhi flavours of Dum Pukht was irresistible.

Stepping into Avartana, the ambiance was refined yet welcoming, setting the stage for what would be a remarkable culinary journey. The 13-course degustation menu unfolded gracefully over two hours, each dish a revelation in taste and presentation. The journey began with an amuse bouche of bitter gourd, surprising my palate with its depth of flavour and setting a high standard for what was to follow.

Chef Nikhil Nagpal’s expertise shone through in every course. The reinvention of traditional ingredients like bottle-gourd, bitter gourd, and pumpkin into delectable dishes was nothing short of ingenious. The bottle gourd spaghetti with plum chutney and the tangy buttermilk sphere atop a crisp chili potato nest were standout examples, transforming ingredients often overlooked into culinary delights.

The menu showcased a perfect balance of tradition and innovation. Asparagus in coconut stew, shrimp and coriander dumplings, and a char-grilled pork belly complemented by Ooty chili jam were just a few highlights that blended regional authenticity with global culinary techniques. Each dish not only pleased the palate but also told a story of Avartana’s dedication to pushing culinary boundaries.

One of the most memorable aspects of my visit was sharing this culinary adventure with a friend I hadn’t seen in three years. The experience became more than just a meal; it was a reunion intertwined with exceptional food and shared memories, making it truly special.

The dining experience was not just about the food; it was a journey of flavours and textures, accompanied by carefully crafted cocktails that mirrored the creativity of the dishes. From the refreshing Munnar Chai Punch to the exotic Madurai Mogra Julep and the complex Alappuzha Nariyal Boulevardier, each cocktail was a perfect complement to the vibrant flavours of Avartana.

Avartana at ITC Maurya exemplifies culinary excellence in every aspect. From its impeccable service and elegant ambiance to its bold and innovative menu, it has rightfully earned its place among the best dining destinations in Delhi. Whether you’re a connoisseur of South Indian cuisine or simply looking for an unforgettable dining experience, Avartana promises to delight and surprise, leaving you with memories to cherish long after the last course is served.
