A simple-easy-to-make-at-home recipe of chocolate cashewnuts and almond pie by Vijayant Rawat, Executive Chef, Mosaic Hotels
On Diwali people receive lots of nuts and sometimes, no matter how hard everyone tries, it is difficult to eat them all. However, instead of letting them spoil or throwing them away, people can use them as ingredients in different food or sweet dishes according to their tastes and preferences. Especially, worth noting is making of sweets at home from healthy options like cashews, dates, and almonds. Here we list one such irresistible dish, the ‘Chocolate cashewnuts and almond pie’ whose recipe is provided by Vijayant Rawat, Executive Chef, Mosaic Hotels, Noida that can be easily made at home.
¾ cup dark corn syrup
½ cup brown sugar
4 tbsp melted butter
1/8 tbsp nutmeg
1 cup almonds
500gm chocolate powder
Preheat oven to 175°C. Melt chocolate in a microwave then brush interior of pie crust generously with chocolate, avoiding the fluted edges and set aside for some time.
In a large bowl, whisk together eggs, dark corn syrup, brown sugar, melted butter, vanilla, bournbon, nutmeg and salt. Stir in cashews and almond then pour into piecrust. Bake until center is thickened but not quite set, about 55 minutes. Transfer pie to a rack and set aside to let cool completely.
Serve pie at room temperature
