Kolkata, Apr 9 : ITC Sonar is betting big on theme restaurants in Kolkata, with speciality foods catching on.
The average per cover (APC), or the average spend a person, in Dum Pukht, one of the few restaurants in the city serving typical Awadhi cuisine, has gone up by 40% over the last year to Rs 2,000.
Peshawari, launched in Kolkata around six years back, is one of the forerunners in north-west-frontier cuisine in the city. The APC at Peshawari is Rs 750, which is a growth of almost 30% over last year. The average cover, or the number of customers on average, at Peshawari is 50 persons for lunch and around 150 for dinner.
The speciality restaurant market in Kolkata has seen a growth in the fine-dining and semi-fine-dining categories over the last few years. The APC in a fine- dining facility is Rs 450 and above.
"Speciality food is our forte as a lot of research goes into it. We have seen good growth in the restaurants in the last few years," said Madhumita Pyne, public relations manager of ITC Sonar.
ITC Sonar houses four facilities in the fine-dining category, Pan-Asian (oriental), Dum Pukht (Awadhi), West View (bar and grill), and Eden Pavilion; two speciality restaurants, Peshawari and Spa Café; and a pub, Dublin.
"We also have a special combo plan for executives at Rs 700 that includes one pint of beer and a set menu," said Uchit Vohra, sous chef of Peshawari.
ITC, keeping the Bengali New Year in mind, has started a festival for tandoor-cooked seafood of Bengal at Peshawari. Dum Pukht will host two types of Bengali cuisine and Shahi Nawabi food
